To say that I am totally focused on food, cooking and diet-related issues right now, is a huge understatement. This year I went from being a vegetarian (although still eating eggs and dairy products) to eating a totally vegan diet (no meat, eggs, or dairy products). Over the months this change has brought about some pretty significant changes in my life.
For one thing, it has finally allowed me to feel at peace with myself and my own personal relationship with animals and the planet as a whole. I have always felt a huge sense of guilt for my own part in supporting factory farming, sure I was able to give up meat, but I knew deep down inside that the dairy cows and hens weren’t being treated any better than the meat animals were. But just the thought of giving up dairy left me feeling like it would be the end of my world…I mean what’s the point in life if there’s no cheese? It was quite honestly the hardest thing that I have done…but only for about 2 weeks. But now the initial shock is far behind me and I’ve discovered all the other truly amazing foods I can cook and eat. I don’t miss dairy a bit and I wish I had done this much sooner.
Another huge benefit is that I am much healthier; I’ve lost 50lbs and am still losing without feeling in the least bit deprived. The reason is that I’m not dieting, I eat what I want, it’s just that the foods I eat on a daily basis have changed, and these foods are naturally slimming.
Also as a result I have gotten off my high blood pressure pills, my psoriasis has cleared up and is about 90% gone with no medications what so ever. I don’t need to take Tylenol and Ibuprofen on a daily basis anymore (for years I’ve taken between 2-6 pills almost daily) for headaches and arthritic aches and pains. In fact I almost never need to take it at all anymore. I have a ton more energy, I’m much clearer in thought, and my overall mood has lifted dramatically. In short it has really changed my life. Peer my husband has also adopted this lifestyle and is experiencing similar results. We know that by making just this one change in our lifestyle, it goes a long way in helping us to walk much more softly on this Earth.
Anyway, I’m NOT here to convert anyone or to preach. But what I will be doing this winter is sharing more recipes with you and talking more about food, diet and how this fits into living a more sustainable, gentler and greener life. I love talking about food anyway so this is something I’m going to enjoy :O)
In the next day or so I’ll begin by talking about some of my favorite foods and what I do with them. As the picture above suggests, I love beans and so that is where I’m going to begin!
